GG used to make this for us as a special treat - or maybe just because it was such fun for us kids to see the sugar froth up in the saucepan! There are fancier versions, but she only used sugar, water and bicarbonate of soda. Hey - we were kids! I still like a Crunchy and it's one of the first things I buy when I land in SA :-)

1 1/2 cups white granulated sugar

1/4 cup water

I TBSPN Bicarbonate of soda

1 baking paper-lined tray (I oil the paper very lightly just to make sure it does not stick to the honeycomb as it hardens.

METHOD:

Put sugar in a heavy bottomed saucepan. Give a shake to level it out, pour in the water. DO NOT STIR

Let it come to the boil slowly and watch it closely, When the syrup is a lovely amber colour, add the bicarb. Stir quickly and pour into your pan. Let it set for about an hour, then smash it and put in an airtight container. If you leave it open, it will not remain crisp.
